large jicama root
1/2
medium onion
minced

garlic cloves
pressed

cheese of choice
I used Halloumi

whisked
Salt and Pepper
Instructions
Peel jicama and shred in food processor
Place shredded jicama in a large colander, sprinkle with 1-2 tsp of salt. Mix well and allow to drain.
Squeeze out as much liquid as possible (very important step)
Microwave for 5-8 minutes
Mix all ingredients together
Sprinkle a little cheese on waffle iron before adding 3 T of the mixture, sprinkle a little more cheese on top of the mixture
Cook for 5 minutes. Flip and cook 2 more.
Top with a dollop of sour cream, bacon pieces, cheese, and chives!
