This is the BEST Keto Soft Pretzel Recipe I've ever tried! The pretzel texture is perfect! It's hard to believe I can eat a low carb pretzel like this!
Preheat the over to 350 degrees and lay out all the ingredients premeasured before you begin.
Add the shredded cheese, cream cheese, and parmesan cheese to a microwave safe bowl and heat it for 1 1/2 to 2 minutes until the cheese has melted. (You can do this on the stove top over a double broiler too if you want to avoid the microwave)
In a separate bowl, combine the almond flour, baking powder, xanthan gum. Mix until all the ingredients have fully come together.
Add the flour ingredients to the warm cheese mixture and add 1 egg. Use a spatula to mix the ingredients together as much as you can (see the video for further instructions).
Pour the ingredients onto a piece of parchment paper or a large silicone mat to avoid sticking when you roll out the pretzel dough.
Separate the dough into 8 equal parts.
Roll each dough ball into a long snake type form. Pull the ends crisscross over the top of a circle to make the pretzel shape for each.
Place on a baking sheet lined with parchment paper or a silicone mat to avoid any sticking.
Mix one egg yolk in a small bowl and spread the egg wash mixture over each keto soft pretzel. One egg yolk will cover all 8 pretzels.
1Add any optional topping suggestions listed above.
1Bake at 350 degrees for 15 to 17 minutes.
