Low Carb Buffalo Chicken Casserole Recipe

  • 1 1/2 cups of hot sauce
  • 4 cloves of garlic minced
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of salt
  • 1 stick of butter divided
  • 4 cups of cooked shredded chicken breast
  • 1 head of cauliflower chopped and steamed
  • 6 hard boiled eggs chopped
  • 6-8 slices of muenster cheese
  • sour cream to garnish
  • cilantro to garnish


  • Preheat oven to 375 degrees Fahrenheit.
  • In a large pan over medium heat, melt 1/4 cup of butter. Add in garlic, hot sauce, salt and pepper. Cook for 2 minutes.
  • Add in shredded chicken and stir to combine.
  • To a well greased 9x13 baking pan, add in chicken mixture, and top with cauliflower and eggs.
  • Slice the remaining butter and place it over the cauliflower. Top casserole with an even layer of muenster cheese.
  • Bake 20-25 minutes, or until cheese is melted and bubbly and chicken has been heated through.
  • Garnish with sour cream and cilantro, if desired.
