Melt mozzarella & cream cheese in the microwave. I do about 45 seconds, remove from microwave and stir and pop back in for another 45 seconds.
Add in almond flour and egg until combined.
Place dough on parchment paper. Top with the second piece of parchment paper and roll out until it's about 1/4" thick.
Use a round cookie or biscuit cutter. I used a 3" for this recipe for a smaller tuna ball. You can use a larger one if you prefer.
In a medium size bowl mix together tuna, cream cheese, and chopped green onions.
Grab a piece of the fat head dough that's been cut out into a circle. Using a teaspoon, put filling onto the dough. Pinch the ends of the dough together and pinch together to ensure the filling isn't going to come out. Roll in the palm of your hand until the dough looks smooth.
Place seam side down on the baking sheet and repeat the process until the filling is gone. You will need to reroll the extra fat head dough a second time.
Bake in the oven at 350° for 20 minutes and golden brown.
