Instant Pot Meatloaf (Cheeseburger Edition)
This is the BEST Instant Pot Meatloaf recipe I've ever tried! It's a keto friendly meatloaf recipe too!! It's topped with a sugar free ketchup and stuffed with cheese!

pork rinds
crushed

egg
1
tbsp
Italian seasoning

tsp
black pepper

tbsp
mustard powder
1
tsp
coconut aminos
or soy sauce
3
slices
bacon
diced and cooked
1
c
mozzarella cheese
or cheese of your choice
2-3
TBSP
ketchup
sugar-free
Instructions
Add beef, onion, garlic, pork rinds, egg, Italian seasoning, black pepper, mustard powder, and coconut aminos to a large bowl. Mix until combined.
Spray a bread pan with nonstick cooking spray.
Place ½ the hamburger mixture into the bottom of the pan.
Next, sprinkle on top bacon and cheese in an even layer.
Place remaining hamburger mixture on top, pressing down firmly to bring the layers together.
Using a pastry brush (or spoon brush) the top of the meatloaf with ketchup.
Grab a sheet of aluminum foil and lay it on a flat surface.
Using a large spatula, scoop out the meatloaf mixture from your pan.
Place on aluminum foil and fold up all the sides.
Place 1 c of water and the trivet into the bottom of your Instant Pot.
Add your meatloaf in the foil boat.
Place Instant Pot on HIGH pressure for 20 MINUTES.
Be sure valve is set to SEAL.
Allow to cook and do a natural release for 5 minutes.
Then turn SEAL to VENT and allow to release pressure.
Top with chopped parsley for presentation and enjoy!
