Halloween Skull Meatloaf Recipe

We just made a frightening Halloween Skull Meatloaf recipe that is perfect for Halloween parties!  What a great way to celebrate the holiday and stay within your healthy lifestyle!  The carnivore people are gonna love this one!!

We used this Wilton Skull Cake Pan to shape the skull perfectly.  You don’t have to use a cake pan but you can see how well it holds up it’s shape when you do.  We made two different versions so you could see the difference.  Both are great but I much prefer the cake skull pan over the free form skull.  Don’t hold off getting this cake pan if you need it for a party.  These cake pans tend to go fast around the holiday.  This pan holds about 2 lbs of ground beef so you are making a generous portion of meatloaf.  We always make extra for leftovers too!  It gives me a nice break in the kitchen.  Meatloaf always tastes better the second day as the flavors set in too.

Halloween Skull Meatloaf Recipe

We used roasted garlic for the eyes and what a treat that is!!  If you have never tried roasted garlic, you need to!  It’s super simple and not only does it add character to the eyes of the skull for Halloween but it tastes amazing too!  I could eat roasted garlic cloves all by themselves!  It’s that good!  Now that I think of it, I probably buy two heads of garlic each week just to add it to all of my meals.  It’s especially good on steak.

To roast the garlic, simply cut off the ends and peel back the outer layers.  Add the bulb to a small sheet of aluminium foil and drizzle with olive oil and salt.  Roast it for about 30 minutes at 350 degrees until the garlic becomes super soft.  Cook it longer if needed.  We cooked it the same amount of time as the meatloaf and it was perfect.  When the garlic is done you can squeeze a small amount out and place some on top of your meatloaf for extra flavor.  That’s what we do.

You can also add roasted garlic to your salads too.  Or roasted veggies.  Either way, it’s delicious!

After the garlic is roasted and the meatloaf is done, you can place the cooked bulbs of garlic in the eyes of the skull!  Super cool!!

Halloween Skull Meatloaf Recipe

Halloween Skull Meatloaf Recipe Ingredients

  • 4 eggs
  • 2 lbs ground beef (80/20 or 70/30 blend – whichever you prefer)
  • 1 cup parmesan cheese, grated
  • 2 tbs Worcestershire sauce
  • 2 tbs mustard
  • 1 tbs Sriracha sauce
  • 3/4 cup Pork Panko (crushed pork rinds)
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 cup Sugar Free barbecue sauce (we like the no sugar added Baby Rays brand best because it’s made with allulose and caramelizes nicely when cooked)
  • Optional:  Onions for eyes, nose, and teeth if you are not using a skull cake pan.

 

Halloween Skull Meatloaf Recipe Instructions

  1. Preheat the oven to 350 degrees.
  2. Add the raw ground beef to a large mixing bowl.  Crumble the ground beef with your hands to break it up.
  3. Add the eggs, parmesan cheese, Worcestershire sauce, mustard, Sriracha sauce, Pork Panko, salt and pepper to the ground beef.   Use your hands to incorporate all the ingredients together until it’s well combined.  I like to wear gloves when I do this.
  4. Place the mixture into the Skull Cake Pan all the way to the top.  Spread half of the barbecue sauce over the top of the meatloaf and bake it at 350 degrees for about 35 to 40 minutes.  If you are using the garlic bulbs for eyes, you will place them in the oven the same time as described above in this post.
  5. Put the Skull cake pan on top of a large baking sheet.  This way if any oil spills over the baking sheet will catch any excess spillage.  I also line the bottom of my oven with a sheet of aluminium foil just in case.  This helps for easy cleanup when it’s time to clean your oven.
  6. Once the meatloaf is done, add the remaining barbecue sauce to the meatloaf and bake it for about 5 more minutes.  Remove it from the oven and set it out to cool slightly before serving.  Remove the garlic bulbs from the oven too.
  7. Turn the meatloaf upside down on a baking sheet and place the roasted garlic bulbs in the eye sockets.  If you are displaying this meatloaf at a party, you can place it on top of a bed of lettuce leaves too.
  8. Enjoy!

Note:  We used extra eggs in this recipe so it would help to hold the shape of the skull nice and secure without it falling apart.  If you decide to use less eggs, the skull might not hold up as well as seen in our photos.  The taste of this was amazing!!

Free Form Skull:  If you don’t have the skull cake pan, you can free form the skull in a baking dish as seen in our photos.  Is does fall slightly but you can still tell it’s a skull.  Place onions for the eyes, nose, and teeth!
