Simple classic flavor in a waffle cake form complete with luscious cream cheese frosting. This is my fiancée’s most requested cake and now he can have it low carb!

Carrot Chaffle Cake Recipe Ingredients

Carrot Chaffle Cake ingredients

  • 1/2 cup carrot, shredded
  • 1 egg
  • 2 T butter, melted
  • 2 T heavy whipping cream
  • 3/4 cup almond flour
  • 1 T walnuts, chopped
  • 2 T powdered sweetener
  • 2 tsp cinnamon
  • 1 tsp pumpkin spice
  • 1 tsp baking powder

Cream Cheese Frosting

  • 4 oz cream cheese, softened
  • 1/4 cup powdered sweetener
  • 1 tsp vanilla extract
  • 1-2 T heavy whipping cream (depending on the consistency you prefer)

Carrot Chaffle Cake Recipe Instructions

  1. Mix your dry ingredients – almond flour, cinnamon, pumpkin spice, baking powder, powdered sweetener, and walnut pieces.
  2. Add the wet ingredients- grated carrot, egg, melted butter, heavy cream.
  3. Add 3 T batter to preheated mini waffle maker. Cook 2 1/2 – 3 minutes.
  4. Mix frosting ingredients together with a hand mixer with whisk attachment until well combined.
  5. Stack waffles and add frosting between each layer!

Makes 6 Chaffles. (Servings) 2.4 net carbs without icing. 3.7 net carbs with icing. 1/4 of cake is 5.5 net carbs!

    These were the best! However, I made a few tweaks since I didn’t want a cake. I wanted to use them as waffles and wanted them to be sturdy enough to put in a toaster. I cut the almond flour by 1/4 cup, replacing with coconut flour. Added 1 more egg, 1/2 tsp xanthan gum. This made it necessary to add more liquid, probably about a half a cup, maybe a little more.

    Using a mini waffle maker, it made about a dozen waffles.

    Using the frosting recipe as a topping for the waffles is out of this world!
